Meat, spuds and some bread

If you like toasted English muffins or English muffin bread, then you will want to try this week’s recipe for bread machine toasting bread. It is very easy and delicious served with a good jam, jelly or honey. I make this bread regularly as there couldn’t be a more perfect toasting bread. I make the dough in the bread machine and when the machine beeps, I turn out the dough and press into a bread pan. I slice the baked and cooled loaf in nice even slices with my meat slicer and store in an airtight bag. Not only do we think it is better than store bought, it’s a lot less expensive to make.

Bread Machine Toasting Bread

3/4 cup milk

3 ounces water

3 cups bread flour

1 teaspoon salt

2 teaspoon sugar

1/4 teaspoon baking soda

2 teaspoon yeast

Cornmeal

Put all ingredients except the cornmeal in a bread machine canister. Put on dough setting. When machine beeps, remove bread pan and turn out dough onto a lightly floured countertop. Lightly grease (I lightly spray the pan with cooking spray) an 8 1/2- by- 4-1/2-inch loaf pan; sprinkle all sides with cornmeal. Place dough into a prepared loaf pan. With your hands, carefully press it evenly into pan. Sprinkle the top with cornmeal. Cover and let rise until dough almost reaches top of pan. Preheat oven to 400 degrees and bake 25 minutes. Cool.

Honey Roasted Red Potatoes

Serving size: 4

1 pound small red potatoes, scrubbed and quartered

2 tablespoons diced onion

2 tablespoons melted butter

1 tablespoon honey

1 teaspoon dry mustard

pinch of salt and pepper

Preheat oven to 375 degrees. Lightly coat an 11-by-7 inch baking dish with nonstick cooking spray. Lay potatoes in a single layer in prepared dish. Combine the melted butter, honey, mustard, salt and pepper; drizzle over potatoes. Bake in preheated oven to 35 minutes or until tender, stirring halfway through cooking time.

Round Steak Marinade

Serving size: 4

1/4 cup wine vinegar

2 tablespoons soy sauce

2 tablespoons vegetable oil

2 tablespoons ketchup

1/2 teaspoon onion salt

1/8 teaspoon pepper

2 pounds round steak or roast

Combine all ingredients. Add meat and marinade overnight. Remove meat from marinade and grill to desired doneness. Let meat stand 10-15 minutes before serving. Enough marinade for two pounds of round steak or roast.

GARY’S TIP: Wipe the TV screen with a fabric softener sheet to keep dust from clinging to your set.
