Showered with foods to remember
I recently had the pleasure of attending a bridal shower for my future daughter-in-law, Lisa.

I couldn't believe the big spread of food, and every bite was delicious.

Here are just a few of the wonderful things we enjoyed.

Barb's Rosemary Shrimp

1 bag uncooked very large shrimp, peeled and deveined

1/4 cup extra virgin olive oil

2 tablespoons Old Bay seafood seasoning

6 cloves garlic, minced

4 lemons, juiced

2 large packages of fresh rosemary

Thaw shrimp. Mix olive oil and Old Bay Seafood seasoning, lemon juice and garlic in a large bowl. Strip rosemary off branches.

To make skewers, put rosemary in marinade. Add thawed shrimp. Marinade shrimp for at least 1 hour - the longer the better. Put shrimp on skewers; grill over high heat leaving the lid of the grill open. Baste with remaining marinade until shrimp are pink. Be careful not to overcook.

Wild Rice Salad

3 cups cooked wild rice, about 2/3 cup uncooked

1 cup cooked chicken, diced

1 1/2 cups green grape, halved

1 cup cashews, chopped

1 cup water chestnuts, chopped

1 1/2 teaspoons season salt

1 cup mayonnaise

Combine all ingredients. Toss gently to blend. Chill before serving.

The Best Fudgy Brownies

1 cup white sugar

1/2 cup brown sugar

3/4 cup unsweetened cocoa

1/4 cup light corn syrup

1 stick margarine, room temp

1/2 teaspoon salt

2 eggs

1 1/2 cups flour

1/4 cup water

1 cup walnuts or pecans, chopped

1/2 teaspoon vanilla

Chocolate glaze:

1 cup chocolate chips

6 tablespoons butter

Mix all ingredients about 3 minutes on medium speed, scraping bowl often. Lightly spray pan with cooking spray. Spread batter in a 9-by-13-inch pan. Bake 20-25 minutes or until done. Cool.

Frost with chocolate glaze. To make glaze, melt chocolate and butter over very low heat. Stir and spread over cooled brownies.

FOOD FOR THOUGHT: Better ask twice than go wrong once.

GARY'S TIP: Wrap your washed lettuce in a paper towel when storing in the refrigerator to prevent rust.
