Hola Mexican restaurant opens in old Reed's building in Baxter Senior Reporter BAXTER - El Tequila Authentic Mexican Restaurant recently opened in Baxter.
The restaurant is inside the FitQuest building in space formerly occupied by Dave's Pizza when the building was Reed's sporting goods.
Pedro Unzueta, a partner in the family run restaurant, said the reception during the restaurant's recent soft opening was positive. Last week, outgoing customers praised the food, Unzueta said.
And the food is where Unzueta said the restaurant can distinguish itself by having authentic Mexican fare through its ingredients.

"We make everything here," Unzueta said. "We don't buy anything prepared."
When people think of spices, they may think of something hot, but Unzueta said the spices are about flavor.
Signature meals include the Tequila Loco, a $12 chicken breast dinner with shrimp, tomatoes, onions, squash, bell peppers and Mexican cheese melted on top. The dish is served with rice and beans.
The multi-page menu includes lunches, dinners, appetizers, seafood, vegetarian dishes, salads, desserts and drinks, which include Mexican pop as well as the usual Pepsi selections.
Diners may order combinations, meals for two or a la carte.
The menu includes a Mexican food glossary with pronunciation guides and descriptions to shed light on the differences between items like burritos, chalupas and enchiladas.
Unzueta said other signature dishes include the Tequila burrito with sliced beef, chicken and shrimp and the restaurant's chimichanga. A veggie fajita includes bell peppers, onions, tomatoes, tender cactus, potatoes and green squash served with rice, beans, salad and tortillas for $9.25.
Menu prices include $3 to $4 for a tossed or guacamole salad to $6 lunch specials to a number of dinners ranging from $8 to $12. A list of 30 combination options - such as one beef burrito, one taco and one enchilada - are $8 or $8.50.

The dessert menu includes cake, custard and pastry. A Xango is described as a creamy cheese cake wrapped in a pastry tortilla fried until flaky and golden and dusted with cinnamon and sugar.
The restaurant seats more than 150 people, employs 11 and includes a full bar.
Unzueta said he's been involved in the restaurant business for about 15 years and the family has two other restaurants in the South. Originally from Mexico, Unzueta said the connection to Minnesota came through friends and an opportunity to provide affordable authentic Mexican fare in the lakes area.
