Jersey Mike's, with hot and cold sub sandwiches, sides, drinks and desserts and catering, is planning on opening soon in Baxter.

Jersey Mike's reports it's the red wine vinegar and olive oil blend that gives its subs an "exquisite zing." The company reports its produce is grown, packed and shipped locally where available with fresh bread baked daily in the stores.

The store is slated to open at 14203 Edgewood Drive, Suite B-2 by Chipotle and Five Guys restaurants.

Brainerd Lakes Area Economic Development Corp. annual meeting will be a Zoom video conference this year. The featured speaker is Shirley Bloomfield. The event is 7:30-9 a.m. March 9.

Bloomfield is chief executive officer of NTCA–The Rural Broadband Association, representing nearly 850 independent telecommunications companies that are leading innovation in rural and small-town America. She has more than 30 years of experience.
