Baxter City Council: New food truck adds to dining options

BAXTER-Green Canteen Food Truck will be offering Philly cheese steak, fresh cut fries, burritos, onion rings and cheese curds in Baxter.

Wednesday the city council approved a mobile vending permit for the food truck to locate at Jack Pine Brewery at 15593 Edgewood Drive. The food truck, with two employees, consists of a 7-foot by 22-foot by 9-foot high food truck. The applicant would operate within the allowed hours of the ordinance.

The city noted its mobile vending ordinance states applicants may receive approval to locate at as many as 10 sites. At this time the application was for a single site at Jack Pine Brewery. A schedule for days of operation was not yet submitted to the city, but the ordinance limits the number of days to two at any one location.

Mobile vendors pay a $300 permit. The applicant's name is Kim Hoban.

Wednesday the council met without a member of the public in the audience beyond staff members and consulting engineers so no one spoke during open forum.

In other business, the council:

Approved assisting with the Cal Ripken State Baseball Tournament from July 13-16 at Oscar Kristofferson Park. The weeklong event attracts about 300 people plus families to the area from across the state. The city agreed to provide two parks department staff members to be onsite for the tournament, which means 20 staff hours a day for four days plus equipment and field supplies at a cost ranging from $3,925 to $4,025 plus the cost of additional trash disposal.

Appointed Brendan Hermerding for the seasonal position of public works maintenance at $10 per hour.

Approved a temporary liquor license for the Aug. 12 Brainerd Jaycees event at the Northland Arboretum. The council also approved a temporary license for the Brainerd American Legion for a July 29 event at the arboretum.

Approved a taxi license for Grab-a-Cab.

Approved an on-sale beer license for SLW Apartments, doing business as Comfort Suites/Rapid River Lodge, in effect now through June 30, 2018.

Met in closed session to discuss the purchase of property.

Announced a date for the joint meeting with the Brainerd City Council at 6 p.m. Aug. 14 with a location to be announced.

Will meet Monday in a special session at 6 p.m. for the Cypress Drive improvement hearing.
