To conceptualize this dish, I incorporated two of the same ingredients offered chefs in the entree round and one ingredient from the dessert round. For more or less winging it, I was pleasantly surprised how well the flavors came together. I've never cooked with any of the three ingredients before—papaya, yucca root or pork rinds. As a running joke about the "stinky rotten cabbage," as I like to call it, my dad gave me a can of Frank's Kraut. Written on the can was "Something to remember your dad by - 2005." For 11 years, that can of kraut sat in the back of my pantry.
